Foil Packets on the Grill: Camping Recipes

Foil Packets on the GrillWhen car camping (or heck, even at home!), one of my very favorite ways to make dinner is to wrap everything in a foil packet and throw it on the grill or campfire.  Not only are foil packets easy to make, clean up is a breeze and you can tailor each packet to each person so that everyone is happy.  And we all know that’s not easy! Foil packets on the grill are not only healthy, they are seriously delicious and everyone in my family loves to eat this type of camp dinner. The ingredients you can use in foil packets on the grill are only limited by your imagination and there are countless combinations.  Here are two of my favorite recipes for foil packets on the grill that are both healthful and scrumptious.

Asian Shrimp With Sweet Soy Glaze

A stable in our camp cooler is frozen peeled and deveined shrimp  As long as you keep the cooler filled with fresh ice, the shrimp will stay chilled until you are ready to cook with them.  I then lay squares of aluminum foil out and place a handful of shrimp on each square.  Next I place thinly sliced vegetables to cover the shrimp. My favorites to use in foil packets on the grill are onions, bell peppers, garlic, ginger, pea pods and bean sprouts.  A sprinkle of black pepper, a dollop of homemade clarified butter and drizzled sweet soy glaze is what makes this amazing! The saltiness of both the shrimp and soy glaze makes additional salt unnecessary.  All you have to do now is fold over the foil to make a closed packet.  It only takes about 12-15 minutes to fully cook the shrimp and vegetables over hot coals or on a campfire.  Make sure to let cool for a bit before opening the packets as steam builds up inside the foil while cooking. Italian Style Tilapia, Mushrooms and Basil Pesto

Another stable in our camp cooler is.individually wrapped frozen tilapia fillets Simply place a piece of tilapia on a square of aluminum foil and cover with thinly sliced onions, garlic, mushrooms and zucchini.  Top it off with a drizzle of olive oil, a sprinkle of black pepper, a dollop of prepared basil pesto and parmesan cheese.  Fold the foil to make an enclosed packet and toss the whole thing on the grill or campfire.  Over hot coals, this will only take about 15 or so minutes to cook.  Make sure to let cool before opening as steam builds up inside during cooking.
